Our fave taco accompaniment…cos its all about the extra bowls of yum when you do a taco spread!
- 1 sweet, ripe fresh pineapple, peeled and chopped into 1 cm dice
- 1 small red cabbage, finely shredded
- 1 small red onion, finely sliced
- 1/2 cup apple cider vinegar
- 1 clove garlic, crushed
- 1/4 cup sugar
- 2 tablespoons salt
- fresh coriander, chopped
Combine everything in a large glass bowl and allow to marinate for at least 1 hour before serving. To serve: lift the cabbage mixture out of the bowl, squeezing gently to remove excess liquid.
Tip >> the lovely pink juice that is left over makes a MEAN margarita addition…don’t throw it away!
